I have never understood why people don’t bother making their own curry pastes. The secret to any good Asian curry is in the paste and, when it only takes 10 minutes to whip up a big batch that you can store for ages, I really see no excuse!

Roast Duck & Vegetable Salad

I threw together this salad as a way to use up Christmas leftovers and a few veggies I had in the fridge, and it turned out beautifully. The duck can easily be replaced with another protein (chicken or tuna, for example) but, equally, can be left out entirely to achieve something delicious.
