Kale has been the talk of the town for the last year, and with good reason. It is a nutritional powerhouse, as well as being low-calorie, high-fibre, and fat-free. I couldn’t believe this when I first heard it but, per calorie, kale has more iron than beef and more calcium than dairy! It is also very high in vitamin A, C and K. It is bursting with antioxidants, such as carotenoids and flavonoids, which help fight various cancers. Kale also boosts our cardiovascular system and has anti-inflammatory properties to fight the bloat! Prepared in the right way, it’s also seriously tasty. So, all in all, if you haven’t already, you need to jump on the kale bandwagon!
It’s really important that you massage the kale for some time, to break down the fibres in the leaves and make the texture more enjoyable. I personally really like massaging the kale in the wet ingredients that I have used in this recipe, as I think the flavours really complement the kale and also go really well with pretty much everything else that you could choose to serve the salad up with. If you want to keep it super simple then I recommend eating this salad with a few creamy avocado cubes, and crunchy pumpkin & pomegranate seeds sprinkled over the top. Otherwise, you can make a real meal out of it by serving with roasted veggies and cooked grains. It’s also lovely as a plain side salad to curries and stews. Let me know if you come up with a great combo that you think I should try, but you really can’t go wrong!
- 1 tbsp olive oil
- 100g kale
- 1 tsp tahini
- 1 tsp apple cider vinegar
- 1 tsp tamari
- 1 lime
- Wash & dry the kale.
- Tear the leaves from the stems, placing the leaves in a large mixing bowl & discarding the stems.
- Add all of the other ingredients to the mixing bowl.
- Using your hands, make sure every piece of kale is covered in the dressing and massage the leaves for approx 5 mins, or until they soften and wilt slightly.
- Serve with anything your heart desires.
